Here's a description http://en.wikipedia.org/wiki/TamaleTamales are very time-consuming to make, so often a family will set aside an entire day or a a weekend to make a huge number of them & freeze most of them to eat over time. Often in Mexico and parts of the southwest US, tamales are made close to Christmas time (may be true in other areas, too-- I just know about my neck of the woods-- or former neck, as I don't live in the SW anymore).
