Since my mom passed away my father and I continue the tradition of making tamales and freezing them until Christmas Eve. On Christmas day we have the traditional turkey and all the fixings.

Tamales are very time-consuming to make, so often a family will set aside an entire day or a a weekend to make a huge number of them & freeze most of them to eat over time. Often in Mexico and parts of the southwest US, tamales are made close to Christmas time (may be true in other areas, too-- I just know about my neck of the woods-- or former neck, as I don't live in the SW anymore).

In Texas and all the other southwest states, they are made all year around. Fresh made tamales, still warm, ya can eat a dozen at a time. God they are good. Home made beans, rice, chili and tortillas, ah what a meal. Wish my grandparents were still alive.
