Paul Thurrott just published an article with information about Longhorn Server.
All the features of the Longhorn client will of course be there, with the except of Aero, the new user interface. Some of the keywords of interest are application publishing, network quarantine, ISS 7.0, hot-patching and image-based setup and deployment tools.
Whether it ships with WinFS or not is unconfirmed. It's current expected release date is early 2007.

1.) The network quarantine feature is a badly-needed one. Kudos for Microsoft finally doing something in that regard.
2.) Hot-patching is a good thing as well. Many times, you can't *just* bring a server down for a restart. Some servers can take up to 30 minutes to fully boot up.
3.) Image-based setups: long overdue. Takes 39 minutes down to about 15 or 20 (under optimum conditions...). Another good idea.
