First of all, store the image in a folder that's easy to get to. Add the "Clock" docklet to your dock. Right click on the Clock. Click on "Dock Entry Properties" and change the image of the clock to the iPhone clock image. This image is just a clock face so after you change the image of the original clock, the hands will stay the same and move on this image. Does that make sense?
