How do you replace the MS Outlook Icon.....

How do you replace the MS Icons (outlook, word etc) in the start menu with icons from iconPackager?
I am using Office 2003.
I have tried to change the icon properties for outlook and word, but the option to change the icon in the start menu or the quick lauch bar is greyed out.
